Spatchcocked Balsamic Chicken

Spatchcocked Balsamic Seasoned Chicken with a Black Garlic Jus

This is a delicious easy recipe that can be quickly prepared and makes a superb family dinner served with a simply dressed salad. Serve alongside boiled baby potatoes or homemade chips.


1 Whole Chicken Spatchcocked ( Ask your Butcher to do this or find out how to in this video > )

2. Letterbox Chicken Seasoning 

3. Whole Onions

4. Letterbox Black Garlic

5. Roast Onion Balsamic Vinegar


Preheat your oven to 200C/Gas 6/fan 180C

Add your spatchcocked chicken to a roasting tray and drizzle with olive oil.

Sprinkle The Letterbox Balsamic Chicken Seasoning all over the chicken. You can add a small amount or a generous sprinkling depending on rich a flavour you require. More is good!

Add some whole red onions to the tray along with a few Letterbox Larder Black Garlic Cloves.

Cook your Chicken for the time required according to the weight.

Baste the chicken occasionally with the juices.

Once cooked remove from the oven and set your delicious roast chicken to the side and allow to rest.

Add the roasting pan to the hob over a medium heat.

With a wooden spoon gently squeeze the onion and garlic cloves.

Add a glass of water and a few tablespoons of Roast Onion Balsamic Vinegar.

Allow the jus to reduce and thicken slightly.

Carve and serve your meat along with your sides then drizzle with your jus for the most delicious Letterbox Larder Chicken Dinner.
